Additionally most apps that work with IR blasters connected via the headphone port will be outputting half the signal to the left channel and half to the right channel so you would need to make sure that either the app supports mono output or you can set your device to mono output with both channels combined, however i have not personally tried this so dont know if this could cause any issues.
The main reason 2 leds are used is due to a lot of devices not outputting enough voltage on a single channel for most IR leds, but there will be some devices that can do it with one led and also some Led's will work at lower voltages too but will have significantly reduced brightness and as such may not hace as much range as you may like or are used to and/or may need more accurate aiming at the reciever than a normal remote.
